Blueberry Crumb Coffee Cake

I have to thank my lucky stars that we live in such a wonderful neighborhood, everyone is friendly and genuinely concerned about each other. This recipe was shared with me by my fabulous neighbors Arty and his lovely wife Mitsy. I have to say it is the BEST Coffee Cake I have ever tasted!

  • 1.5 cups all purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter or margarine softened
  • 1/2 cup sugar, I used Splenda Sugar Blend
  • 1 egg
  • 2 cups fresh or frozen blueberries
  • 1/2 cup milk, I used 2%
Topping
  • 1/4 cup flour
  • 1/4 cup sugar
  • 1/2 tsp cinnamon
  • 3 tbl butter or margarine
  • **I also added a few dashes of Ginger**
Preheat oven to 375 degrees

Mix flour, baking powder and salt on waxed paper.

Cream softened butter and sugar in a large mixing bowl until light and fluffy, beat in the egg.

Place blueberries in a small bowl, dust with a small amount of the flour mixture. Toss to coat. Add the remaining flour mixture and milk alternately to creamed mixture, mixing continually

Gently fold blueberries into batter.

For the topping, mix flour, sugar and cinnamon (Giner if you wish) in a small bowl, cut in butter until crumbly.

Spread batter into a greased 8 inch square baking dish.

Sprinkle topping over batter.
Bake for 45 minutes or until topping is golden brown.

Serve warm.

That coffee cake looks so good. While I like pie, I actually prefer coffee cakes for occasional treats! How do you like baking with splenda? I've only used it as a beverage sweetener, and I'm curious how it stands up in the cooking/baking arena!

I have never sent a blog, but this recipe takes the cake... and I could not resist adding in my two cents. I was lucky enough to get a piece of this cake yesterday and can tell you it was wonderfully moist and was one of the best coffee cakes I've ever had, and I make lots of coffee cake. Can't wait to make one (and eat one) all myself.

My neighbor came over to my house and yelled at me over my dog!

I have a dog that I can't keep in my yard. I have tried everything and she always finds a way out. Anyway, this lady comes to my home, knocks on my door and when i open the door she points her finger at me and yells obscenities at me. Apparently my dog was in HER neighbors garbage and then pooped on HER NEIGHBORS LAWN! Why didn't she come and talk to me like a civil human being? Why was she a vicious monster attacking me at my door? I calmly went over to HER NEIGHBORS house where the garbage was and picked up every piece, and the dog poop. I agree that I have that responsibility to clean up after my dog. The one thing I don't agree upon is someone coming to my house and screaming in my face about something I didn't know about. Is anyone out there been blessed with a psyco-neighbor?
I don't think anyone remembers the golden rule...Do unto others as you would want done unto you!
I sent them a lovely card from this site I found...www.URAJerk.com

Am wondering how much milk to use?

How to spatchcock a chicken or turkey!

Finishing some of Cheryl's drafts... Keeping spatchcocking simple. Using a VERY sharp cleaver or kitchen shears -- not scissors, carefu...
