Cheryl's Kicked Up Queso


I adore Queso (Ok cheese in general), and have always made the same recipe that my dear friend Phil used to make for potlucks. Today, I decided to branch out on my own, and make Queso with a Dunkin spin!

It was soo delicious and when Fritos Scoops are dipped into it, you are literally in heaven. Try this for your next Football game day, family gathering or potluck, I guarantee it will be gone in minutes! The Chorizo really makes it special.

I actually make this in my Fondue pot and it works perfectly.

1/2 brick cream cheese
1 link of Mexican Chorizo Sausage, cooked, drained and set aside
Small can of sliced olives, drained
1 can Rotel
4 oz can diced green chilis
I medium loaf Velveeta
1/4 white onion
1 cup grated cheddar cheese
Cholula hot sauce
1 bag Frito's Scoops Chips

Saute you onions briefly in a scant bit of olive oil until softened, remove and saute your Chorizo until done, carefully remove the meat leaving the red fat behind.

Place the onions and Chorizo in the vessel you will use for your Queso dip

Add in your remaining ingredients, stir till well melted

Add Cholula to taste for the heat factor

Serve with Scoops chips!

Where do you get your Chorizo?? It is in every recipe from my husbands country and its not at any of our regular stores. I always forget to check when I go to the Mexican market.

Oh my gosh, I'm using a different computer tonight, and your blog has loaded with the most delightful font type! Sooo cute! My usual machine is an ancient dinosaur! I love this whimsical look going on here! :-) I also love your queso dip! I love chorizo and I bet it really kicks this up a level or two. I've seen that hot sauce, but haven't tried it yet. Must remedy that. Fritos are not safe if I'm in the room! YUM!

Oh my Cheryl this sounds sounds fantastic. My husband and I would fight over the last scoop. Adding the Chorizo is a fantastic idea!

Great idea to use a fondue pot for this, love it. And the frito scoops, my hubby would be in heaven. His favorite chip.

That looks like heaven. Just reading this made my cholestorol count spike, but a few extra jogging laps around the block is SO worth it.

It's when the weather gets really cold for the first time of the season that I remember this dip--a football standby. The chorizo is a nice twist.

What is Velveeta? Is that real cheese? But whatever it is, the dip looks GREAT! I LOVE the whole linnk of chorizo in there...who cares abt my waistline, I want the whole bowl! >.<

This looks awesome, Cheryl! I've made queso like this w/ hamburger but never chorizo. I'll have to try it your way! I'm a big fan of Fritos Scoops, too. It's a nice change instead of always using tortilla chips.

I found your blog on tastespotting and made this dip tonight. Absolutely delicious! Only thing I changed was I used soyrizo instead of chorizo for a vegetarian take. Yummy! Thanks for the recipe
