Homemade Refried Beans


We had a belated Cinco De Mayo party (same one as the Flan), and I decided to make my own Spanish Rice and Refried Beans. I have never made either from scratch before, it was about time. The beans turned out really well, my Father In Law is a bean lover and he enjoyed them! The rice is in the picture but it was awful! so I wont tell you about that!

Refried Beans
4 strips of bacon, diced
3 cans of pinto beans, drained
1/2 onion diced
1 tsp garlic, chopped
2 tsp fresh lime juice
2 tsp hot sauce (I use Cholula)
1/3 can of Rotel Tomato and onion
salt and pepper to taste
Method:
Fry the bacon until crisp, remove and set aside.
Cook the onion and garlic in the rendered bacon fat until lightly browned. Add one can of pinto beans and mash with a potato masher or spatula.
Add the remaining cans of pinto beans and the rest of the ingredients including bacon and cook thru.
Taste and re-season if necessary.

Yum, Yum! We are definitely on the same wavelength, I made chicken mole, beans and Mexican rice for supper last night. My rice was pretty good, but hot. I used 1 can of Rotel, whizzed in the blender, 1 can of chicken broth, some cumin, cilantro, black pepper, a bit of chili powder, some Mrs. Dash Southwest Chipotle, some hickory smoked salt, garlic, 1 cup of rice and about 1/2 of an onion chopped up. I just sauteed the rice and onion for about7 minutes in bacon grease and then bunged in all the other stuff and let it cook.

Hope you stayed cool in today's tarzan heat! We ran some errands this afternoon and it was 108 ... that's 1-0-8!!!

Great stuff, Cheryl! I really would be interested in knowing more about the rice that didn't work out. I've found that while the things that work well can be very individual, the things that don't work are often common to us all.
