Chevy's is my favorite local Mexican Restaurant, the food is not all that authentic, but I love it anyway. One of my favorite items is the Fire Roasted Chicken Flauta's. I have been wanting to re-create them at home for quite some time. I finally did and WOW is all I can say, this recipe is a keeper!
Fire roasted bell peppers diced (I did mine on the open flame of my gas stove)
Grilled Corn (same thing as peppers roast on the open flame and cut from the cob)
Flour tortillas (smaller size)
Mexican cheeses (your choice)
Crema (Mexican Sour Cream, you can find it at any Tienda or probably your local Grocery Store)
Chipotle Cream
1/2 c sour cream
salt and lime juice to taste
Purple onion diced small
Cilantro cleaned and chopped
First heat your tortillas up on the microwave in a damp paper towel to make them more pliable
Pour a bit of crema down the middle of your tortilla, add chicken mixture on top, add cheese and roll up jelly roll style
Heat oven to 375 degrees
Place on a raised rack on a baking sheet, coat with pan spray, cook until crispy about 8-10 minutes then turn over and cook for an additional 5-6 minutes or until crispy and golden brown.
Serve with the Chipolte Cream and the Pineapple Salsa in addition to the Jalapeno Jelly!
It helps if you have a Chevy's nearby so you can help yourself and buy some of their salsa and chips which are amazing! This tastes exactly like the Flauta's at Chevy's and since they are baked, they are probably better for you! p.s. that is not my photo, I forgot to take one!

Jalapeno Jelly (sweet kind)
JalapenosChipotle Cream
1/2 c sour cream
1/2 cup mayo
2 tbl chipotle puree/salsasalt and lime juice to taste
Pineapple Salsa
1 diced jalapeno
Pineapple diced small (as much as you like)1 diced jalapeno
Purple onion diced small
Cilantro cleaned and chopped
Mix chicken and salsa until moist, add in the roasted corn and diced red peppers set aside
First heat your tortillas up on the microwave in a damp paper towel to make them more pliable

Your flautas sound super! I've only been to Chevy's once...the only one near me is in a mall, and I'm allergic to those places :)

This is my kind of food and it looks delicious. We don't have a Chevy's near us. Too bad. I would have loved to have checked them out. I thought of you recently - my husband is creating all kinds of dishes using Krispy Kreme donuts! I remember you posted some things a while back using Krispy Kreme's. I should have some of them up soon. He just loves his Krispy Kremes!!!

I've been to a Chevy's once - but it was a work function and the only thing I liked was the chips and salsa - these look amazing!
I've never been to Chevy's...but man I think I'd rather be in your house for dinner...and take home a gallon of that chipotle cream, please! :-)

Ohhh, Cheryl - yes, yes, we just watched the last episode of Fringe last night!! (I downloaded it from online) - oh my goodness, I was holding my breath the whole last 10mins of the show! And that moment when Peter "said goodbye" to Olivia...sigh...I was almost in tears!! Oh! Oh! I can't wait for the Final to be over tonight then I can download it from online and watch it!!!!! :-) I checked the "promo preview" on YouTube of the Final and it looks like they've totally gone off on a new tangent again - I love the Fringe wrtiers - always coming up with stuff you never thought of!!

man, do i love mexican food. even though it almost always looks a little bit repulsive, it definitely always tastes good. the special cream and salsa here are an excellent touch!
