Carrot Slaw

My husband made barbecued ribs on Sunday and I decided to make Carrot Slaw. I have not had it in many years, my mom used to make it all the time. I looked around the web for the basic recipe then Dunkinized it!

The red pepper flakes were a fantastic addition, they made you go HMMMMMM!

p.s. thanks for your support, the puppy and I are finally getting a system down and things are going smoother around the Casa!

1 cup low fat mayonnaise
1/4 tsp black pepper
1/2 tsp salt
3 Equal packets
1.5 lbs shredded carrots, I used about 8 carrots
1/2 cup raisins
1/2 cup Craisins
small can drained Mandarin Oranges
1 tsp crushed red peppers (optional)

In a medium bowl, add mayonnaise, pepper, salt and Equal, mix well.

Add carrots, raisins, Craisins and the mandarin oranges. Stir well, add in your red pepper flakes if you choose to do so!

It is even better the 2nd day!

Yum. I've never had carrot slaw before but it sounds tasty.

mmmm. i make a carrot slaw with pears and a whole grain mustard vinaigrette. one of my faves. this sounds DELICIOUS, too!

I have never seen a carrot claw..unless you take into regards that carrot/raisin salad. It looks great and I bet the pepper flakes gave it a nice zing!!

That sounds fresh and tasty, like nothing I've made before - I have to admit that my only 'slaw' is bag coleslaw mix with a little dressing, this looks much better!

So, did you shred the carrots yourself? I suppose if you have a food processor that would help. Otherwise, you are a patient woman!

Also, I love the use of equal as a sweetener, and the Craisins. A perfect summertime BBQ accompaniment!

carrot slaw! very nice and crunchy...what would you pair them with? I supposed it would make a nice pulled pork sandwich, too!

Sounds yummy Cheryl. I like that you added mandarin oranges, usually I add crushed pineapple. And I betthe red pepper flakes added something special.

This sounds interesting...my mom used to make a "CPR" salad (Carrot, pineapple & raisin) that wasn't too bad.

Ok, potty training tips. First, I must admit the Babies were terrible to potty train--Chihuahuas are the hardest! What finally worked was giving them a tiny bit of a pupperoni treat every time they went potty on the newspaper (or outside) with heaps of praise. Scolding didn't work, newspapers didn't work, phermones didn't work...we just got some stuff at the vet to get the odors out from marking...I'll let you know how it works!

Mmm, carrot slaw sounds fantastic. I'm loving the depth of color and of course your addition of red pepper flakes. How delicious! I bet it was a wonderful complement to the BBQ/grill out.
