One day while grocery shopping I saw bags of Cinnamon Chips in the baking aisle. I had not seen anything like that previously, so I bought two bags, brought them home and promptly forgot about them. Yesterday I had the baking bug and decided to use them in Oatmeal Cookies. They turned out really well!
Next time I will add Golden Raisins, and perhaps some Pecans.
Ingredients:
1 cup (2 sticks) butter or margarine, softened
1 cup packed light brown sugar
1/3 cup granulated sugar
2 eggs
1-1/2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
2-1/2 cups quick-cooking oats
1-2/3 cups (10-oz. pkg.) HERSHEY'S Cinnamon Chips
3/4 cup raisins
Heat oven to 350°F.
Beat butter, brown sugar and granulated sugar in bowl until creamy.
Add eggs and vanilla; beat well. Combine flour and baking soda; add to butter mixture, beating well. Stir in oats, cinnamon chips and raisins (batter will be stiff). Drop by heaping teaspoons unto ungreased cookie sheet.

I love using Cinnamon chips in cookies, it gives such a great taste and scent to them. They look awesome.

I've never heard of such a thing! Bugger I just got Mum & Dad's care package (American marshmallows and Acini De Pepe pasta), otherwise I would have had them chuck in some of those cinnamon chips as well...ah, next time I guess. The cookies look really yummy!
