My husband loves Oatmeal Raisin cookies, and I decided to bake him some. I found some toffee chips in my cupboard, so I decided to throw them in and see what happened, YUM is what happened!
Ingredients:
1 stick butter
1 cup brown sugar
1/2 cup white sugar
2 eggs
1 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
2 tsp cinnamon
3 cups rolled oats (not instant)
1 cup raisins
1.5 cups toffee chips or you can just break up the bars
1/2 tsp salt
Method:
Preheat oven to 350 degrees.
Grease your cookie sheet (I used a silpat instead)
Cream together the butter, brown sugar, white sugar
Beat in the eggs, one at a time
Stir in vanilla
In a separate bowl, combine the flour, baking soda and cinnamon and slowly pour into the creamed mixture
Blend in the oatmeal and toffee bits
Spoon onto cookie sheet
Bake for 10 minutes, it may take a few minutes longer, but check at 10
Let cool on a wire rack

FyI-In the ingredient list at the bottom you have salt but it's nowhere in the method. I figured the salt got mixed in with the flour. These cookies are really yummy! Thanks!
