I watch a ton of cooking shows as I imagine all of you do. My personal favorite is Barefoot Contessa. I was watching her show the other day and she made smores using cookies. What a great idea! I love smores and on occasion crave one.
I don't normally eat cookies, but I perused the cookie aisle and found these fabulous Digestive Cookies by LU. I had my marshmallows ready and proceeded to make the best smores I have ever eaten, seriously, give this a try!
I used a chop stick and toasted my marshmallow over the flames of my gas stove, but I have done it on a regular stove top as well. Toast your marshmallow and put it between 2 cookies, you will be in heaven.
1 package large sized marshmallows
1 package LU Digestive Cookies
1 chopstick or stick or even a kabob dealie would work

Smores any way sound good to me, but I love this idea. Barefoot Contessa is one of my favorites to watch also. Where ya been?? Feel like my bloggie BFF has disappeared.

are those cookies chocolatey on both sides? if not, i bet it would taste awesome if you flipped the cookies on the chocolate side so the marshmallow would slightly melt said chocolate side, thus creating an actual smore-like yummy factor.

I love Ina's recipes and there is not much that can top a toasted marshmallow...I don't even need anything else with that!

Great idea! Ina is the only show I strive to watch on the Food Network. I like her because she looks like she eats and makes a mess when she cooks. The only pet peeve I have with her and all the other tv chefs is that they don't scrape their bowls down to the last drop like most of us would. LOL!!
These would be great to have with the drink we just posted... They look wonderful, everyone loves a good smore.

You could probably use tongs, too, to hold the whole ensemble together. Either way, I like the alternative to graham crackers. And Ina Garten is a favorite in our house as well!

I saw that Barefoot Contessa show too ... and was drooling as much as u when it came to the s'mores scene! I've already got the marshmallows at home ... just need to zip over to the store and get the LU cookies.

Oh. My. Gosh! Once again, I'm asking, why have I never thought of this! This is like a gourmet style smore, and I will feel sooooo suave when I whip these out! By the way, let's give those cookies a new name. "Digestive" just doesn't live up to their yumminess! :-)

In college, my husband (then just boyfriend) and I would CRAVE smores late at night. Obviously, there aren't any flaming stoves or a place to build a fire in the dorms; so we would light a candle, unbend a paperclip and toast marshmallows over that tiny candle flame! Who knows what kind of carcinogens we ate since they were cheapo dollar store candles, but it was heaven at the time.
OMG I remembered I tried somein Hawaii! it killed me how much it is good...but a little bit caloric no??
I saw this picture on photograzing and HAD to comment, because this is an idea whose time has come. Not only that, but I'm obsessed with the chbocolate-dipped disgestives... my British grandmother used to bring them back from England for me. This is pretty much the best thing I have seen all day.
