Corned Beef Hash




I am a fan of Corned Beef Hash, the kind in a can, Hormel specifically. I have never had anything as good as the stuff in the can, seriously, it is my all time favorite. Some things are just better out of a can, this being one of them!

Have I made myself clear!

Also, it is one of the first things my dear Sister In Law Mary and I bonded over.

That being said, I made Corned Beef last weekend and had some left over. I decided to try to make home made hash. It was pretty good, but I still prefer the stuff in the can, I am weird that way.

This recipe makes 2 servings

1 large Russett Potato
1/2 yellow onion, diced
2 garlic cloves, minced
1 to 1.5 cups of diced corned beef
salt and pepper to taste
garlic powder
onion powder
Cholula Hot Sauce
Olive oil

Scrub your potato well, microwave for 5 minutes, remove and let cool

Dice the potato into cubes, removing the skin if needed

Place a tablespoon of olive oil in a non stick fry pan, add the onions and saute for about 5 minutes

Add in the meat and garlic (you may need more oil at this point), saute for about another 5 minutes, add your seasonings to taste. Add in a few drops of Cholula for color and zing

Add in your potato and continue to cook (try not to keep stirring, let the potato develop a brown crust)

Serve with an Egg on top, I like my yolks runny!

That looks fabulous. I love corned beef hash and it has been quite awhile since I made any. I do skip the egg though. Good eats for sure.

that oozing yolk just bowled me over. Looks terrific! I've sadly never had corned beef hash before. I've got to try this or I will have nightmares of me dying without ever having tried this. YUM!

Oh, I'm an ADORING fan of Corned Beef Hash ... especially with a lovely, perfectly prepared egg on top. I don't know which one I'm drooling more over ... the egg or the hash! I like homemade and canned varieties (it's Mary Kitchen brand for me!). I love that you sprinkled some hot sauce on top, too! Ah, we should be next door neighbors.

Girl, that hash looks awesome, especially with the egg. I have weirdness in me too! I love fake mashed potatoes and fake chicken sandwiches from my kids' cafeteria. Seriously, I will go eat with them only on the days they have those spicy chicken sandwiches!

Corned beef hash here in the US is always fried as a breakfast. In England, my mum always made corned beef hash as a stew, and that's how I always make it. Not that I don't like the US version too, I've just never made it.

Hmmm...have to disagree. My fresh hash (with slow cooked corned beef in the crockpot) is so much better than the canned stuff...come over & I'll show you! (Corned beef hash was always one of Dad's special Sunday morning brunch specialties!!!)

One of the best reasons to make corned beef and cabbage is for the leftovers. Corned beef sandwiches with mustard and lettuce, or corned beef hash, fried up with leftover boiled potatoes, to serve with runny fried eggs for breakfast.
