Summer Vegetable Salad


One of the many things I love about summer is the abundance of fresh produce. This salad is quick, flavorful and you feel good eating it. Topped with just a bit of Feta cheese, the combination of sweet, salty and crunchy is wonderful!

Handful of grape tomatoes
Feta Cheese Crumbled
1/2 English Cucumber sliced
1/2 small Jicama sliced into sticks
5 or so Radishes sliced
1 banana pepper (off my very own plant)
Roasted corn kernels

Assemble the salad, sprinkle a bit of Feta on and the dressing of your choice, we enjoy Ranch!

What a great cool salad to eat on a hot day! I love the crunch that Jicama provides! How great that you used your homegrown banana pepper!

No way! I just ate something similar tonight (like a funky Greek salad thing). I'm definitely gonna try your recipe! Loooove crunchy veggies.

RYC: YAY on the adoption application! I talked with my guy a short while ago, and he told me to hold off on the pet searching..... yea, right. lol He has a point. I should wait until I'm back home and then he and I could go get the baby together. But it's killin' me! Maybe I should throw myself into something else... like cooking. I totally suck at it. It would be such a nice surprise for my guy if I could fix something actually worthy of a fork in a mouth. :D
